I love making small cookies and pastries. It’s so easy and they are perfect to keep frozen and defrost whenever you have guests over. These munchies are originally called Raspberry Caves but I think you should make it easier for yourself and chose the preserve you got at home. This time I made blueberry flavoured ones!
– Aaalmost 2 cups of flour
– Aaalmost 1/2 cup of sugar
1 tsp baking powder
2 tsp vanilla sugar
200 g butter
About 1/2 cup of preferred preserve
Oven first – 200 degrees!
Mix flour, sugar, baking powder and vanilla sugar. Chop the butter into cubes and add to the mix. Use your hands and work through the mix until you get a firm dough.
Shape the dough into balls, walnut size is good, and put them in cups.With your thumb, make a small hole in each cookie and add a little of the preserve (I personally think I used too much preserve this time, regarding both look and taste so keep it little!)
Bake in the oven for about 10 minutes until they are golden brown!
I know it’s difficult to not eat them all straight away but as I said they work great to keep frozen. Just bring them out 30 minutes before you’re planning to eat them.
